Honey Glazed Gammon (pre-cooked)

Sometimes it can be difficult to find completely uncooked or unsmoked gammon. For this situation here’s a nice simple recipe with pre-cooked ham:

3 or 5kg Gammon
1 Onion 
2 Large carrots (or packet of baby carrots) 
300ml Beef or vegetable broth 
One handful of clove seeds 
200g Demerra sugar 
250g Honey
50ml Reduced balsamic vinegar (or sherry vinegar) 
100ml Marsala (alternatively Sherry or Madeira)

Preparation:

  1. Heat oven to 170Fahrenheit. Clean pre-cooked gammon. Put in a roasting pan, put onion slices underneath and around. Put vegetable or other broth at bottom of roasting pan. Seal with aluminium foil and put in oven for 3h or until internal temperature of 145F is reached.
  2. Take out the gammon and put it on cutting board. Slice diamond shaped on surface of fatty skin (don’t cut in the meaty part). Stud centre of each diamond with a clove seed.
  3. Add sugar, honey, balsamic vinegar, Marsala (or Sherry, or Madeira) in sauce pan, bring to boil and simmer 3-4 minutes, don’t burn it. It should look like a glossy dark syrup when its ready.
  4. Bring the oven temperature to 375F. Add carrots in the roasting pan. Pour half of the syrup on the gammon, roast for 15 minutes.
  5. Pour the rest of syrup over the gammon and put back in oven and roast for another 25-30 minutes or until gammon is golden brown.
  6. Remove from oven and let the gammon rest for 15 minutes.
